Peas and Green Onion Sabji

Ingredients:


Onion 2
Capsicum 2
Peas(cooked) 1 cup
Spring onions 1 cup
Oil 1/4 cup
Cashewnuts 1/4 cup
Cream 1/4 cup
Tomatoes 3
Garlic 6 flakes
Butter 1 tbsp
Chilli powder 1 1/2 tsp
Salt 1- 1 1/4 tsp
Sugar 1 tsp
Jeera(cumin seeds) 1/2 tsp
Ginger 1 inch



Directions:


  • Grind ginger and garlic into a fine paste.
  • Grind cashewnuts also into a fine paste.
  • Chop all vegetables .Puree tomatoes and cook peas.
  • Heat oil in a thick vessel, add jeera. when it splutters add onion and sugar and fry till light brown in color.
  • Add ginger-garlic paste and fry till the raw smell of garlic disappears.
  • Add chilli powder and cashewnut paste and two slit green chillies and fry a bit.
  • Add the pureed tomatoes and fry on a slow flame stirring all the time, till oil floats on top.
  • Add salt and one cup ofwater little by little simmering all the time till a thick gravy is formed. Add peas.
  • Heat butter in another pan. Fry capsicum till tender and the green onion leaves . Fry till slightly wilted.
  • Pour the fried capsicum and spring onion onto the simmering gravy. When the gravy is slightly thick pour in the beaten cream.
  • Simmer just once and serve hot with any naan.
